Kai’s The New Native American Cuisine Cookbook

Kai Restaurant at the Sheraton Wild Horse Pass Resort & Spa in Chandler is one of the top dining destinations in Arizona–if not the nation. Kai is one of only six United States restaurants to have earned the AAA Five Diamond status. And Kai’s amazing chefs, including Executive Chef Michael O’Dowd, are sharing their lip-smacking recipes with the masses in the new cookbook, “The New Native American Cuisine” by
Marian Betancourt (www.globepequot.com).
KaiKai, the centerpiece restaurant of the Sheraton Wild Horse Pass Resort & Spa near Chandler, is highly regarded for its Native American cuisine. It’s one of only six U.S. restaurants to have garnered AAA’s Five Diamond status, and the only Native American one to have earned Mobil’s Five Star rating.
So I was very excited to learn executive chef Michael O’Dowd and former chef de cuisine Jack Strong have co-authored a new cookbook with veteran food writer Marian Betancourt.
“The New Native American Cuisine: Five-Star Recipes from the Chefs of Arizona’s Kai Restaurant” features more than 50 recipes, such as grilled buffalo tenderloin with smoked corn puree, sweet corn panna cotta with pickled squash and lobster tail on fry bread with avocado mousse.
The book, which also includes a Native American food glossary and a shopping guide, was released Sept. 1 and is available in hardcover ($24.95) at the resort and major bookstores. You also can get it on Amazon.com for $16.47.

Kai voted “Best Food,” “Best Service” and “Best Overall” restaurant in Phoenix
Kai at the Sheraton Wild Horse Pass Resort & Spa is being named one of the best places to eat nationwide! That’s according the 2009 Zagat guide, the diners of OpenTable and the meticulous inspectors of AAA.
Recently Kai emerged as the only AAA Five Diamond establishment in Phoenix/Scottsdale. Most recently, Kai was again awarded the only 2009 AAA Five Diamond Award in Phoenix/Scottsdale.
More than 15,000 OpenTable.com diners voted Kai “Best Food,” “Best Service” and “Best Overall” restaurant in a recent poll.
Local food critics agree, as Kai continues to top “Best Of” lists in Valley publications being touted for “Best Patio Dining” and “worth it” in this challenging economy.
Kai, the Pima word for seed, opened in October of 2002. Its the first Native American owned or themed establishment in history to receive the coveted AAA Five Diamond Award and now the Mobile Four Star Award.
Under the direction of Executive Chef Michael O’Dowd and Chef de Cuisine Jack Strong, along with Consulting Chef and James Beard Award-winner Janos Wilder, Kai has coined its own “Native American Cuisine with Global Accents” and has won the hearts of Resort guests, local foodies and even the toughest food critics.
